Not a frozen disc.
We don't make our gluten-free dough in-house — we buy it from Sweet Escapes, a dedicated gluten-free bakery in Longmont that does nothing else. That's the whole reason it tastes like pizza instead of a compromise.
Our gluten-free dough comes from Sweet Escapes in Longmont, Colorado — a dedicated gluten-free bakery. It goes in the same brick oven as every other pie, with the same sauces and the same toppings. Available upstairs all week.

Same brick oven, same sauces, same toppings, same char on the crust. You order it the way you'd order anything else on the menu — build your own, or take one of the standards and swap the crust.
The upstairs Taproom kitchen runs seven days a week, so gluten-free is available any day we're open — not just on Pizzeria nights. Dine in or order takeout.
We want to be honest with you rather than reassuring. The dough itself is made in a dedicated gluten-free bakery, but our kitchen is not a gluten-free kitchen — we handle regular flour, and gluten-free pies bake in the same brick oven as everything else. We take care with prep, but we can't promise a zero cross-contact environment, so we won't call it celiac-safe.
If you're gluten-sensitive, you'll be very happy. If you have celiac disease, tell whoever takes your order — they'll tell you exactly what we can and can't do that night, and you can decide from there.
